PRETTY GRILLED CORN

Easy and presentable grilled corn, what’s not to love!

4-6 corn on the cobs
Hefty pinch paprika (smoked paprika!)
Optional cayenne pepper (spicy!)
Cojita cheese, grated for sprikling
2 tablespoons unsalted butter
Gently peel back the husks (sometimes strip by strip), gather them at at the top of the corn, remove all corn strings and gently tie the corn husks together with a space piece!
Grill corn to on medium, 7-10 minutes until brown
Whisk room temperature butter slightly with a fork, ready for spreading. Separately mix together paprika and cayenne and grate 1/2 a cup of cojita.
When the corn comes off the grill, lightly coat with butter, spices, salt pepper and cojita, optional sprinkle of fresh lime juice. Serve!
