TOMATO MOZZARELLA WITH BASIL…& MINT!

This is SUCH a simple family recipe that we have been using for years. It was one of the first recipes we learned as “young marrieds” when we were entertaining, is always a crowd pleaser and is very, very easy!

Ingredients
~3 medium, preferably heirloom tomatoes
One mozzarella
Handful lovely smelling basil
Handful lovely smelling mint
High quality olive oil, roughly 1/3 a cup
1 – 1/2 lemons
Hefty handful flakey sea salt
Directions

Rinse and slice (thinly) the tomatoes and mozzarella

Line a decorative platter with tomato and mozzarella, alternating each slice (layering in a circle, see pic above for reference)

In a blender, add 1/3 cup beautiful olive oil, the juice of 1-2 lemons, a hefty handful of sea salt, a heavy palm size of mint and basil — blend and taste! If it tastes too much like olive oil, add more lemon juice!
4.
Drizzle the blended basil and mint dressing over the tomatoes, sprinkle torn basil leaves on top, salt and pepper to serve. This is easy to make ahead of time and is beautiful cold. Typically when I serve it to guests, I dress RIGHT before serving!
